What to add to an egg sandwich?

Recently I’ve been skipping a lot of meals. I was thinking about just having egg sandwiches at lunch time just so I get in the routine of eating so I don’t skip meals. What can I add to it to make them better / healthier but still not a lot of calories

Go for a wholegrain bread and add lots of veg. If you're in the habit of skipping meals, your meals you remember to eat shouldn't be extremely low-calorie; they should be clean and contain a good mix of fiber, protein, and vitamins/minerals.

I LOVE egg sandwiches. I like to meal prep them because they’re so easy to make & eat. In a glass baking dish (13x9) I put like 8 scrambled eggs, cooked bacon chunks, & shredded Gruyère cheese (any combination of meats, cheese, & veggies is fine 👍🏻) & bake it for about 10 mins at 350. It makes the easiest patties. Then you can freeze either the egg patties by themselves or toast bread & then freeze whole sandwiches (I do this to make sure I use the whole loaf of bread before it goes bad since it’s just me). I’m not super picky so I just throw it in the microwave whether it’s frozen or from the fridge. They last for several days in the fridge, I always eat them before they go bad 😅 But yeah I recommend peppers, onions, ham, bacon, steak bites, any cheese, there’s all kinds of combos & it all just gets scrambled together into the mix. Just make sure all meat is cooked first.

I like to sauté some spinach in olive oil, adding nutritional yeast, chili crisp, and sunflower seeds.

Mix with Greek yogurt instead of mayo, or had and half. Add crunchy veggies. Lots of seasonings!
