How to add calories to meals for a pre-teen boy?

Our family eats super clean because we have a bunch of autoimmune diseases and the kids are at risk for these. We don't really follow any diet trends but it's probably most similar to a paleo gluten-free diet. Typical diet is red meat, chicken, pork, fish, fruit & vegetables, nut butters, gluten free grains/noodles. Snacks are things like Chomps, gluten free crackers & cheese. My son is a preteen and is just ravenous but is also a picky eater. What are some ways I can add healthy calories to his food? I was thinking an extra baked potato with butter for dinner. He's already started eating an apple & peanut butter after most other meals. Any other ideas?

Try adding high healthy fat ingredients like avocado to sandwiches, salads, etc. Also try adding filling items with high fiber like hummus and other bean-based items. Fiber is filling and satisfying.

Nuts as a snack. Nuts are full of calories. Added olive oil to foods that already use oil. Heck when I was in a pinch with my toddler I added a pew tsps to her oatmeal for the added calories and healthy fats

The potato sounds good since they’re known for being filling. If possible, an extra helping of meat at meals would be good too. Something you can do to bump up the apple and pb is make a peanut butter dip with Greek yogurt. Yoghurt in general is a pretty good snack too

Taters, maybe two or three if needed are a good idea. Might let him dress them how he likes. Can of chili, cheese, sour cream, cream of something soup usually mushroom, can all help it stretch further too.

I would add extra protein and fiber to his diet. Nuts, whole grains and protein rich veggies along with meat. Protein rich shakes with veggies and fruit in them are also good. If he will eat it Greek yogurt is also filling and some berries or other fruit and a bit of honey or maple syrup. Could be a dessert or a snack. Protein bars that are mostly made of nuts is another great option. Also if you have leftovers from a meal that won't be the next night's meal let him have those as snacks.

Chia seeds and flaxseed will be your new best friend. High in calories and extremely healthy. I also recommend talking to a registered dietitian, they can help you cone up worh a meal plan that meets everyones needs and tastes.

I recently tried cottage cheese and was surprised how good it tasted. It’s not expensive and can be added to other meals.

If you do eggs, they are great and filling. Also relatively easy for kids to learn how to prepare themselves.

Nuts, coconut oil, olive oil, everything full fat. My mom used to make my brother "chocolate milk" with whole milk, some heavy cream, coconut oil, and chocolate sauce.

Oat bars made with bananas and peanut butter are a great whole grain filling snack. You can mix in pretty much any dried fruits, nuts, even extra protein powder if wanted. I flavor with vanilla, cinnamon and nutmeg but they're endlessly customizable.

Similarly, coconut oil into anything that olive oil would taste funny in. Can throw a spoonful or two in smoothies and desserts for a few hundred calories

If you can do gluten free bread, pb&j. There are some good natural jellies and peanut butter out there.

Sandwiches made with waffles instead of bread. Smoothies with extra protein powder and cream or half and half.
