I'm from rural Canada so this wasn't something I grew up with but I found this recipe and tried it and it was extremely cost-effective and tasty! It’s kind of like making a vegetarian chili (minus the bacon) with a few types of beans, onions, peppers and chili seasoning.

I was surprised how flavorful it was given that it doesn't have a ton of ingredients like chili does. I'd also never had cornbread and was surprised by its taste, too. The bag of cornmeal is gonna take me pretty far.

You'll get a crispier crust.

That recipe is the one that won my kids over to cornbread. It's more like corn cake in a lot of ways. They never would have touched the PW version, and ngl it doesn't sound appealing. I feel like that much shortening is not going to taste that great, plus doesn't seem healthy. I grew up with the BH&G recipe which has a lot less sugar and fat than Sally's and is probably healthier. But it's pretty dry and I can see why they didn't like it much.

Try switching out the beans to vary it up. My favorites are navy beans and butter beans. I've also had black beans, mayo cobas, and red kidney beans.

east tn and my grandparents and mom ate majority this from poverty, and so did their parents and back and back. soup beans is great.

It's a really good recipe. Yeah, Everything of the Pioneer Woman has been meh to me. I'm not fond of her whole schtick and the family is really problematic. I have been known to call her the Pioneer Witch, lol. My grandma made really good corn bread, and I miss her cornbread fritters. But Sally's recipe is the next best thing.

I like it with salt pork rather than bacon. If you have leftover cornbread, try cornbread mush. When it starts to go stale, crumble with milk (or buttermilk) to make a cold porridge. My grandfather ate it every night for supper, but I like it for breakfast.
